Would using something like the alternatives system work?  You wouldn't
have to update the application launchers, and it would make it so that
command line commands (aka to run mozilla,oowriter, etc) would launch in
the appropriate place (either client or server or app server).  And then
you could have a root GUI that would allow you to add applications (and
then specify client/server/app server where you wanted it to run and it
would take care of updating all the symlinks.
