I agree with Brian in separating the duties. I would use your old box and use IPCop with Cop+ (which includes Dans Guardian) then have your email server and web server behind that on a separate box. We have a similart setup here with about 600 computers behind the IPCop machine.

How about seperating off the Proxy server bit (Squid / Dansguardian) off and using something like Censornet (www.censornet.com) on your old machine and just leave the new server to do the rest ?

Censornet is really good, can't sing it's praises enough.
