Ntop (http://www.ntop.org) will summarize usage in various
ways looking at actual packets going through the interface.  If
your switch supports port monitoring, you can track things
on other machines.

Cacti (http://www.cacti.net) will maintain graphs of bandwidth,
CPU, and memory use - or anything else you can monitor with
snmp, including router and switch traffic.
