If these laptops are all the same or very similar hardware you could 
consider setting up an imaged or kickstart installation for them to 
simply re-build when someone messes them up rather than 
troubleshooting.  That is not to say you shouldn't go the K12LTSP 
route.  But you could also consider having loaners with a loaded OS for 
students to sign out and take home.  You would definitely want a local 
rsync of any yum repositories you use.  And if you use kickstart then 
you should consider building an updated installation tree with most of 
the updates incorporated.
