Checkout the workbooks on www.getopenoffice.org.  They're by Solveig Haugland who wrote 
one of the definitive books on OOo, and does training for it.  The site mentions 
discounts for schools.

BTW, if anyone is using these, I'd be interested in an opinion.  I've run into similar 
resistance from the tech teachers at my school.  One thing they say they like about 
teaching MS Office is the available curriculum, which is a valid point.  (OTOH, they're 
somewhat circular in their logic: "We should teach MSO because that's what we have 
workbooks for; we need to keep buying workbooks for MSO because that's what we teach." 
Sigh.)
