This is weird.
I think I'd boot the server up (edit grub "kernel" line, add "single"
to end of line), disable nfs (chkconfig nfs off), then manually start
NFS after finishing the boot phase to see exactly where it was
segfaulting.
Or you could check RAM (memtest86), file system (e2fsck), installed
file integrity (rpm -Va >rpm_errors @>&1), and maybe the linked
libraries (prelink -v /usr/sbin/rpc.mountd).
