The new Edubuntu "Thin Client Manager" installed on my feisty machine today
with some updates (it was Student Control Panel a couple days ago).  It looks
like this tool does as Petre suggests above and creates snapshots for a
multiple screen view.  It also has a refresh button underneath the thumbnails
to update the images in the list.  Also if you are looking at a list of
clients on the left hand side when you select one the right hand pane show a
list of running processes along with a thumbnail of the current desktop.  The
tool doesn't work for crap right now as I assume it is still in development. 
But maybe you could get the source from that to see how it is done.
