I'm not sure this is well documented, and I honestly don't know how
this is on your setup, but for KDE mime stuff is usually here:
  /usr/share/mimelnk
and for Gnome here:
  /usr/share/mime-info
and for Mozilla (which uses mailcap):
  /etc/mime.types

I'd grep around in those directories for wine until you find the ringer.
