I build similar systems that can handle 25 clients and are upgradeable
to about 50.

The issues are things like Gimp (need to set the default to use MUCH
lower than 128MB!!) and students opening a zillion copies of the same
app by elbowing the keyboard :)

Other apps like TuxMath/TuxType will just run slow (as the number of
users goes up) as they are just not designed to be run in a heavily
multitasking environment.
