If that's the case, then you only have two reliable options. One is  
using etherboot or some other bootdisk and setting the clients to use  
a nonstandard port for DHCP, usually 1067. That way they don't  
request on the same port as the other server. Your other option is to  
do the two NIC install on your server and put your thin clients  
behind the ltsp server, that would prevent them from sending their  
DHCP requests to the other server.
