The config file is documented in man 5 virt-v2v.conf. virt-p2v-server 
*should* have a minimal man page telling you:

=head1 NAME

virt-p2v-server - Receive data from virt-p2v

=head1 DESCRIPTION

virt-p2v-server is invoked over SSH by virt-p2v. It is not intended to 
be run
manually.
