Depending on what exactly you want to do with your data and the
precision you want to gather, Munin can be a great helping tool.
It will give you the opportunity to gather data about your resources on
the hypervisors and their usage. Furthermore, it comes with Libvirt
plugins that allow you to check the resources usages of your VMs on said
hypervisor.
