That depends on whether or not you control the SAN environment. 
Personally, I would not boot from the SAN if I could not be 100% assured 
that others would mess with it. Otherwise, not only do you lose your 
data volumes, but the root disk as well and with it goes your ability to 
diagnose the problem. If you do control the stability of the SAN, then 
it is a reasonable idea as long as the OS supports it. I know Solaris 
does, can't be sure about Linux ... never tried it.
