yeah, that's one place I was considering, but after talking to dlutter I'll
revamp the config presistence to use existing STATE_MOUNT mechanism in
rc.sysinit and remove mount_* from ovirt-early.
This will mount /config early enough so that persisted fstab with an entry
for /var/log takes effect.
