File System Survey

I am evaluating the best file system for use on production servers, such as
e-mail, web, etc.  I was wondering how everybody has their systems setup.
Here is the information I am requesting:

 

Type of file system (ext2, ext3, etc)

What is the partitioning scheme?

Do you use different file systems on different partitions (ext2 for /boot
and /, ext3 for /usr and home, etc)

Do you mount any part of the file system as read only (/usr)
