Differential backup recommendation?

I believe rsnapshot will do everything you want. You might want to set up a 
mondo image of the box newly-installed, so you can restore from "bare 
metal" with mondo. Then you backup everything you need and restore from the 
rsnapshot backup. That would keep the size of your backups down even further.
