Custom RPMs and configuration files

I was hoping there was a way to modify the configuration files from the
RPM's %install section.  

I'd rather not build images that RedHat provides because then there is
the issue with dealing with updates.

You could generate your own images insteading of starting with the Red
Hat supplied RPMs.  There are instructions out there on how to do that
but I don't have them handy.  In theory, you can have your own umdnj-edu
group and select the packages to be installed from that group.
