hostname -- how is it set?

Hello,

What configuration file must I edit to change the system's hostname?

I know I can issue the hostname command, but I want to make whatever
change is needed so that the change will be effective after subsequent
reboots.

I found HOSTNAME in /etc/sysconfig/network, but it is set to
localhost.localdomain which does NOT match then output from the hostname
command.
