Experiences with Linux versions. Suggested versions for a server with two processors and 64Gb of RAM

We want to install a server with two processors, 64Gb of RAM and RAID
devices.

In your experience, Is the Enterprise Edition version a good option for
this, or perhaps we need the AS version?
