David,

You can do this with redhat-config-date, or by hand by linking to the 
timezone you want (in /usr/share/zoneinfo) from /etc/localtime .  For 
example, if I wanted UTC, I'd 'ln -s /usr/share/zoneinfo/UTC 
/etc/localtime .
