yum groupinstall GNOME-desktop
(or whatever the relevant group is called)
ah, it appears to be:

GNOME Desktop Environment
so,
yum install 'GNOME Desktop Environment'

could do the trick for you.

(up2date also has group support IIRC, up2date --help for info.)
