Answered my own question.. 
Its the NUMBER of times a CPU has proccessed a request from a device
interrupt.. 
If any of you all are looking to do some system perfomance howtos 
i just got the Performance Tunning for Linux Servers from IBM press.. 
Learning something new with the book.. my 2 cents.. buy it.. 

how can i find out what the output of for interrupt activity by 
processor is really showing me..  
  
 CPU  i000/s  i001/s  i004/s  i007/s  i008/s  i009/s  i014/s  i015/s  
i169/s  i177/s  i185/s  i193/s  i201/s  i209/s  
  
  
Is it the amount of time the CPU was used to service a system function 
from the device ??  
man pages and google havent helped much..
