yes.

portmap only uses port 111 anyway.
the others can be configured by setting variables in files under
/etc/sysconfig

eg, in /etc/sysconfig/network:

YPSERV_ARGS="-p 8008"

followed by a restart of ypserv will bind it to port 8008 only

you can do similar things with NFS
