this is one way to do some of this...
I used the schema from Jamm with openLDAP with little or no issues...

you can plug in something like Mailscanner or amavisd-new to manage your
spam and virus checks.
calendaring? That's harder.
Global address books are fairly straightforward with openLDAP.
Get the basics set up first, then choose a calendaring implementation.
