As to your initial question about memory consumption: for regular
quick checks look at the "si" (= swap in) and "so" (= swap out)
columns of vmstat.  As long as there's no (or hardly any) swapping,
you know you're OK.
If you'd like to read up on memory management, try google with "linux
memory management", or "linux internals".

LVS won't work for Oracle RAC. It's not cluster aware.
You need a filesystem that is cluster aware (such as GFS or OCFS(2))
or at least can be shared among multiple systems such as NFS.
OCFS is nice, but last I looked, it won't give you software RAID, or a
way to resize your filesystem.
ASM does have those features.   Disadvantage of ASM is that you need
RMAN to backup your database.  Which in itself isn't a bad thing as it
allows for faster backups and restores. But it is an extra product to
learn.
Note also that OCFS and ASM can be used free of charge.  GFS comes at
a (significant) price.
