yum - prevent Redhat-Release update

"yum update --exclude=kernel" Should probably work for you.

Additionally, you can edit your /etc/yum.conf file, and edit the
"installonly_limit" line to increase the number of kernels it keeps
installed.

That way, you could just download and install the kernel, but not
necessarily boot to it.
