Zimbra is a good solution for an Exchange-like environment.

Depends heavily on what kind of features you are looking for out of
your mail solution. If you just simply need email and nothing else,
then either postfix or sendmail as your MTA and dovecot for IMAP would
be a great solution. But if you're looking for more of a "unified
messaging" portal that includes calendaring and the like then you
probably want to start looking at Zimbra.
