parted /path/to/disk mklabel gpt
parted /path/to/disk 'mkpart primary 0 -0'

should give you one big partition. You may need/want adjust the "0 -0" part
to accommodate for alignment of the disk for better performance and you'll
need to be using a distro capable of 4k sectors I believe.
