AS and ES are designed for different levels of system - the website clearly talks of the expected roles for each. (Please dont as a consultant who I metdid, not read and think ES was enterprise and so designed for higher load and AS was application server.. its ES = Entry server, AS = Advanced Server)

RH3 vs RH4, 4 has newer kernels, etc, its just newer packages in general, its also likely different products will be used, for example, often in changes of RH major revisions changes such as from XFREE86 to Xorg, or new versions of window managers, and additional new packages ..
