It should be similar to changing the timezone on a linux server. You can
jus do :
cp /usr/share/zoneinfo/CET /etc/localtime to set to CET or
cp /usr/share/zoneinfo/EST /etc/localtime to set to EST.
then sync your time with ntp server and should be good to go I think.
