Hello,
I do not know how SLES releases its packages and updates, but I
would assume common yum repo (like "fedora" and
"fedora-updates").

Create repo / repos:
  Channels -> Manage Software Channels -> Manage Repositories -> create new repository

So you can create custom channel:
  Channels -> Manage Software Channels -> create new channel
    in Repositories tab, attach your repo / repos
    in Repositories -> Sync sub tab sync it or run sync using
      spacewalk-repo-sync

Now you have channel with SLES content. (if you want to
kickstart system - if it works like Fedora / RHEL:) You will need
to create kickstartable distribution as well (for that you will
need something Fedora / RHEL have on ISO in images/ directory.

I do not know how to register SLES system though :)
