What we do is we just go to Vcenter and do it manually to take snap shot of the VM before we patch it.

But VMware(Vcenter) has command line to do multiple VMs with PowerCLI

We are patching our servers with a script, that uses the spacewalk API, to schedule the errata installation on the clients.

You could just extend such a script to connect to your vcenter and snapshot the VM, before you actually run the errata installation.
