You can't do that in Live.
I tried to have easier way to avoid input methods in Anaconda
but they seem little interested in pursuing that approach.

Fonts is outside this discussion and there are good reasons
for installing a default font for most languages.
But yeah we probably want some way to uninstall unwanted fonts too.
