The EL versions are supported for years with bugfix/security updates but 
you don't get new major versions of applications.  Centos 5 will start 
out with approximately the application versions that are on FC6 which 
are good choices now.  A couple of years from now you can expect the box 
to still be running reliably and still a good choice for server 
applications but desktop apps are still evolving rapidly and you may 
want to jump to some newer FC version to get new app version.  I'd 
recommend going with the EL version when it is current so your next 
choice of when to upgrade will be based on what you want to run, not 
being forced to switch because your old version is not supported with 
updates any longer.  It's also a good stable choice for a machine that 
will be a home directory server.
