I watched the recent Railscasts videos on multitenancy and they were quite interesting. For the PostgreSQL one, Bates uses schemas and search paths in postgres to separate out organizations' data. He also uses a shared schema to share data between organizations. They're worth a watch if you have a Railscasts Pro account.
