If you're neither a postfix nor sendmail expert, and don't have access
to an expert in either, I recommend postfix. It's easier to learn and
faster out of the box.

I then suggest you look at MailScanner (http://www.mailscanner.info) -
this acts as a front-end to your anti-virus scanner if you have one, and
to spamassassin for spam filtering.
The Postfix web site has some Howtos and FAQs. http://www.postfix.org
And, of course, don't forget the Linux Documentation Project at
http://www.tldp.org. Theres a TON of info there.
