Either of the following works for me:
dialog --title "This is a test menu box" \
--menu "Here is a list of valid choices" \
20 61 4 "[FOOD Foods]" "[BEER Beers]" "[GEAR Gear]" "[ANIMALS Animals]"
dialog --title "This is a test menu box" \
--menu "Here is a list of valid choices" \
20 61 4 [FOOD\ Foods] [BEER\ Beers] [GEAR\ Gear] [ANIMALS\ Animals]
