Why are they disabled by default?

If it helps, you can see the repos which come from your susbcriptions by 
doing:

[root at bkearney ~]# subscription-manager repos --list
+----------------------------------------------------------+
     Available Repositories in /etc/yum.repos.d/redhat.repo
+----------------------------------------------------------+
Repo ID:              	rhel-6-server-sam-source-rpms
Repo Name:            	Red Hat Subscription Asset Manager (for RHEL 6

Enabled:              	0


What perry said is accurate... the repo commands just gives you tooling 
into that redhat.repo file.
