after p2v you can use spacewalk-hostname-rename command to rename spacewalk hostname, for this you can refer to rh doc:

but I'm not sure if the above doc for satellite 5.6 can fit on your spacewalk 2.0, but after p2v you can snapshot your vm spacewalk and start to try&test...

instead, if you prefer to do a fresh installation you can use satellite-sync command to export and import repositories
